A Veggie-Q for my QT!

Being a vegetarian does not mean that you can’t enjoy summer parties, potlucks and BBQ’s. You just need to get a little creative and have fun with it. So this past weekend was my fiances birthday. He wanted a low key night, a dinner in with some family and close friends. Of course what this means, is that I am making dinner! Which is no problem of course, I love providing delicious goodies, especially things that everyone can enjoy! Not everyone who was coming was a vegetarian, but that didn’t matter, my mom took care of some chicken for the group, and I handled the rest!
Make sure that when you are in this situation, you find out what all your hunny’s favourites are – and go from there (hopefully you know them already!). Luckily everything that Ryan loves, are things that everyone could enjoy – and they also make great compliments to the main meal.
So we started off with some yummy appetizers, There was a home made guacamole, parsley-hummus, along with an organic store bought salsa – lots of spelt flatbread and organic corn chips for dipping. Then we had a selection of side dishes – Ryan’s favourites include (quinoa tabule, pasta salad, yam fries and “caesar” salad) and the main meal for us was Organic Sunshine Burgers (which are truly scrumptious) simple ingredients and are so easy to enjoy at a summer-Q with or without a bun!
Of course the night was topped of with Ryan’s all time favourite – a tender Chocolate Cake – made from spelt flour (all vegan and sweetened with maple syrup) crowned by an almond butter, cocoa icing – this is his number one request on a annual (or more like weekly) basis! So I paired this with coconut-mint (from my garden) cacao ice cream (the colour green in the ice cream is actually from Ormus Super Greens). No one even questioned why the ice cream was so bright green! I may even post this recipe too since it was soooo fantastic!
So there you have it, an amazing, wholesome meal that everyone can enjoy – lots of variety, flavour and texture. You want to keep your crowd happy, but most importantly you want to make your CUTIE smile on his birthday!

Vegan – Mint Cacao Coconut Ice Cream

Chocolate Cake with Mint-Cacao Ice Cream

Me and my QT (Ryan)

Mint-Cacao Coconut Ice Cream
2 cans of organic coconut milk
1/4 cup vanilla rice milk
1/4 cup maple syrup
2 tbsp fresh stevia leaves (only the fresh leaves or else leave it out!)
1/2 cup fresh mint leaves (or you can use a few drops of peppermint oil)
1-2 tbsp Ormus Super Greens (it has a minty flavour)
1/4 cup cacao nibs
Place all the ingredients except the cacao nibs in a blender and blend until smooth, creamy, and green.
If you have an ice cream maker, pour the mixture in and begin to churn, adding the cacao nibs after a few minutes.
If you don’t have an ice cream maker, freeze the mixture in a large bowl for about an hour, then remove and stir in cacao (so they don’t all sink to the bottom).
Then continue to freeze for another hour or two (depending on the consistency you like).

I can’t emphasize enough how important it is to add these yummy foods into your diet, whether it is hemp, goji, acai, cacao, coconut – they all taste amazing and make you feel great!
I have written many a blog post on superfoods. There are various recipes and articles on these foods right here on my blog. That way I can provide you with as much information and ideas of how to use and consume these foods. Superfoods is such a buzz word these days, and it is important to understand why, when and how to use these foods. But the bottom line is to just get them in!
In David Wolfe’s Superfoods book he goes into detail on each of these superfoods (and so much more). So I encourage you to pick up a copy! It is a really comprehensive book as it gives you a detailed outline of how to use these foods, which are “the most nutritious foods on the planet!” David Wolfe.
Here is a mini outline of some of the top ones…
Goji Berries: Goji berries are the most nutritionally rich berry fruit on the planet. They taste delicious and are well balanced for nearly all body types. They are a complete protein source and contain nineteen different amino acids, trace minerals and vitamins. (also great for vision, libido, hormones and an incredible source of antioxidants)
Cacao: The best natural source of antioxidants, magnesium, iron, vitamin C, omega 6 – and chocolate just tastes good!
Spirulina: ancient blue-green algae that is power packed with protein and chlorophyll.
Hempseed: contain all the essential amino acids and fatty acids to maintain human life. Enough said!

RAW WALDORF SALAD
Ingredients:
1-4 cups of arugula or mixed greens
¼ cup peeled jicama
3 stalks celery diced or cucumber chunks
1 apple, diced – I like granny smiths
1 cup sunflower sprouts
½ cup walnuts, chopped
1 tbsp hemp seeds
1 tbsp goji berries
1/4 avocado, sliced
Waldorf Dressing – makes over 1 cup (use
¼ cup hemp oil
2 tbsp raw tahini
2 tbsp lemon juice
2 tablespoon apple cider vinegar
1 tablespoon raw honey
2 tablespoon tamari
2 tbsp – ¼ cup freshly squeezed orange juice
Filtered water (add slowly only if needed without hemp oil)
- Combine the dressing ingredients in a blender and blend until smooth.
- Pour over salad ingredients and toss until well coated.

I “Heart” Cookies!

I LOVE that I can make up a batch of cookies without even baking them! Just in time for Valentines Day these little “raw” sweethearts are power packed full of super foods. These are my same “go-to” ingredients that I use to super power my smoothies and snack on throughout the day. Except this time I threw them all into the food processor and blended them into a thick batter and pressed them into delicious yummy little cookies!
You can use anything you want inside. Just pick from wholesome raw and organic ingredients. It is best to use dates to stick them together and then throw in some other goodies like nuts, seeds, goji’s, cacao and super powders (maca, mesquite, cacao, lacuma) which would make them chewy, crunchy, sweet, bitter and scrumptious all at the same time.
It’s nice to know not all cookies have to be baked. These “hearty” bites took all of 15 minutes to prepare and the yield was enough for me to bring to a dinner party of 10 or more. Very little mess was involved plus the excitement of the creation was the biggest part. I didn’t really plan what or how I wanted these cookies to turn out – they just did!
Sweet-Heart Cookies
1 1/2 cups whole raw almonds
2 tbsp hemp seeds
1 cup chopped dates
1/4 cup goji berries
2 tbsp cacao nibs or cocoa powder
1 tbsp agave nectar
1 tsp mesquite powder (optional)
1/2 tsp vanilla powder
1/2 tsp cinnamon
1/4 tsp sea salt
**for an extra protein boost – add 2 tbsp Sun Warrior Protein Powder
Place all the ingredients into the bowl of a food processor and pulse until you get a thick “doughy” consistency. Spread out and cut into “heart” shapes with a cookie cutter or roll and flatten into 2 inch cookies.

I have given myself permission to have chocolate everyday. This may not sound like a good thing – but let me tell you that it is, on sooo many levels! Not only does chocolate or better yet cacao possess many amazing nutrients including magnesium, antioxidants and other amazing trace minerals- it makes you feel good. So that should be good enough – right?!
I think I speak for most people (especially women) when it comes to wanting your “fix” of daily chocolate. But the truth is that most women when they “crave” and eat chocolate, they are most likely going for poor sources where chocolate isn’t even the main ingredient. In this case, it is more of an addiction because it is the sugar that many are addicted to and not the chocolate. Not to mention most chocolate bars are full of processed dairy, hydrogenated oils, soybean oil and other ingredients which just take away from the “pure-ness” that chocolate is meant to be. If you want chocolate it in things…add it yourself to your own recipe and make it yummy. But never buy a low quality and poor sources of chocolate. What a waste!
I like to enjoy the purest and most natural forms of chocolate. Whether it is in the form of a piece of dark chocolate from Endangered Species, Zazubean or local sources such as Chocosol and Living Libations, I am happy to support good fair trade chocolate from all over. Then of course there is cacao powder (both raw and dark roasted), cacao beans and cacao nibs. I add these guys to smoothies, puddings, raw pies, granola, oatmeal, hot cocoa or any other treat that deserves being made chocolaty! When it comes to chocolate try get as pure as you can – with as little ingredients as possible. You may as well get the best chocolate you can – it will only taste better and you will feel it, right down to your core!
So for my daily creation today – being that it is the afternoon on a snowy day. I could go for a hot chocolate or I could go for something with a bit more substance but yet is still warming. I love playing with my vita-mix and creating something new and fun. So instead of a smoothie – I am going to make a warming, spicy pudding. Here is what I am using and why I used it!
Spicy and Warming Chocolaty Pudding
1 scoop of Chocolate Sun Warrior Protein Powder – to give me a boost of pure vegan protein.
1/2 cup rice milk or almond milk – to make it creamy and somewhat wet
splash of coconut water – Yum!
1-2 dried banana – to sweeten it up naturally
1/2 pear – to thicken and sweeten
1 tsp cinnamon – to warm me up!
1 tsp mesquite powder – to give me extra energy!
1 small piece of ginger – to spice it up!
1 tbsp raw cacao powder – to make it extra chocolaty
1 tbsp raw cacao nibs – to give a chocolaty crunch
1 tbsp chia seeds – to make it thick and delicious
Blend all this goodness and pour into a bowl and enjoy!
The BEST night EVER!

These are the wise words of David Wolfe – a renown guru in the world of raw foods. I had the opportunity last night to go and see him speak in Orangeville Ontario. Even though he racaps on so much of what I know – he always has a way of taking nutrition to a whole other level beyond most people’s consciousness.
The emphasis last night was on Superfoods. This term has been coined to emphasize food from nature which has superior health benefits. The best part is that these foods are so widely available to us – literally they are all around us in nature. Unfortunately most people don’t even know what true superfoods are or better yet what they can do for our body, our mind and of course our health. Superfoods are foods that have unique properties that have the ability to nourish our body in more than one way. For instance on single food item (such as goji berries) may contain not only protein, but also immune properties, antioxidants and trace minerals. So in one single tiny berry you are getting an array of health benefits. Other superfoods – according to David Wolfe include Cacao (yes this is chocolate), maca, bee products, blue green algae, marine phytoplankton, aloe vera, hemp seed and coconuts.
So last night I went with a friend to watch and be inspired by David Wolfe’s magnetic energy about superfoods. You can’t help but feel his buzz and become pumped about all the benefits that these foods have to offer. Before I had arrived at the lecture, I was feeling a little tired from the long day I had, luckily there was a chocolate elixir available for me to drink and this perked me right up and made me feel amazing. I mean, who wouldn’t want to drink a cup full of chocolate goodness? I am talking about chocolate in it’s purest sense- no dairy and no unnatural sugars, only filled with herbal extracts and other super healthy goodies. This was followed by a slice of heavenly cheesecake made from cashews and coconut butter…I was in heaven!

Since I already have been including superfoods in my diet for a long time – I thought I would share my favourite super smoothie recipe with you!
Chocolaty Super Food Smoothie!
1-2 cups almond milk
1-2 scoops of sunwarrior chocolate rice protein powder
2 tablespoons goji berries
1 tablespoon raw cacao or cacao nibs
1 tablespoon hempseeds
1 tablespoon coconut oil or butter
1 frozen banana
1 tsp maca powder
1 tsp cinnamon
Place all ingredients in blender or vita-mix and blend until smooth and creamy!
